L-valine is a white monoclinic crystal or crystalline powder, and it is a colorless plate or scaly crystal when it is re-cleaned with an aqueous ethanol solution. Odorless, with a special bitter taste. The melting point is about 315°C. The pH value of 5% aqueous solution is 5.5~7.0. Stable to heat, light and air.
